This week Sydney has been struck by Stormageddon: rain, wind, massive surf, rain, and more rain. It’s been dubbed the Storm of the Century, which isn’t actually all that impressive when you consider that’s actually just 15 years, but it does give you a sense of the level of carnage, so we’ll go with the moniker.

Bizarre confession time: I have a morbid fear of food courts. Can’t stand them. As well as the obvious – dubious degrees of cleanliness, the general awfulness of a CBD food court filled with depressed looking workers, eating even more depressed looking meals – as a TV producer I have a more specific, unique apprehension about food court eating: being caught on camera filming file footage for a story.  Think about it, you’re sitting there trying to scoff down a sneaky kebab before heading back to the office, while a harried cameraman quickly pans around the room, then voila – suddenly your noggin is on the 6pm news accompanying a story about the obesity epidemic, or listeria outbreaks in salad bars or something. Shudder.

Anyway, the flip side of my paranoia means I LOVE a leftover, so I generally always look for ways to stretch out my dinner recipes to ensure a Tupperware of goodness for hubby and I to have for lunch the next day. These bad boys are a favourite – the basic recipe can be adapted to fit whatever veggies you happen to have in the fridge, pimped up with some bacon or smoked salmon, and finished off with extra cheese.
