So you know how people say moving is one of the most traumatic life events after the death of a loved one? Well I wouldn’t go that far, but let’s just say moving house is more stressful than one of those really gory episodes of Game of Thrones where every character you like dies (#ripjonsnow). It’s more stressful than trying to download with a slow internet connection. It’s more stressful than a lost iPhone (trust me, I did that too last week). And when you throw in a 10-month-old baby as well? Well it’s more stressful than all those things combined.
Needless to say, I’ve been a bit too busy to cook anything remotely interesting, but after Sydney copped another bout of seriously awful rainy weather, I got my act together and managed to spend a few hours in the kitchen. I wanted something hearty but nourishing, with a big whack of spice (just, y’know, because), so after the happy discovery of some leftover chipotles in the freezer, I decided on these chicken burrito bowls.
