Slow-cooked lamb feast

So I’m not the greatest at following recipes. I mean, I look to them for guidance and inspiration, but in terms of following them and doing exactly what they say… Well, let’s just say I’m not so good with instructions. I’d invited friends over for dinner, and was looking for something to make and saw a beautiful slow-cooked lamb recipe in one of my Donna Hay cookbooks. ‘Perfect!’ I thought, and promptly went out and bought a lamb shoulder to roast away happily. However, in my haste I hadn’t actually read the ingredients closely (or actually at all), and when I went to cook the darn thing I realised I didn’t actually have ANY of the ingredients required. Other than lamb. Therefore I did what I do best… and winged it.

Italian style eggplant salad

If I had to pick my favourite vegetable (you know, in some sort of life-or-death greengrocer showdown situation), it would have to be eggplant. It’s so meaty and works so well across a variety of different cuisines, from Asian to European to Middle Eastern. It’s delicious baked, grilled, barbecued, fried or used in sauces… It’s the best! Which is why this eggplant salad is one of my favourite side dishes, going perfectly with any meat or fish. Or, add a handful of baby spinach or rocket and serve it as a more substantial salad for lunch.
